DeBordieu

Cole and I just returned from a weekend of R&R at the beach. His parents joined us, and it was fun showing them the beach I grew up visiting. I was especially excited that Cole got 2 good nights of sleep. He deserved them! These EARLY mornings are EARLY, and sometimes I wonder if he will ever be able to make up the sleep deficit he has already accrued. We were thankful he had the weekend off, and I look forward to many more these next year!

Our meals were yummy and fun to make, but none topped our dinner at the Beach Club. What a treat! Here are some pictures with the recipes attached.

DeBordieu

Recently, Cole and I enjoyed a weekend at DeBordieu. He was off from his normal duties and call at the hospital for 2 days in a row, which is unheard of these days, and we took this opportunity to pack our bags and head to the beach. This post is a little past due, but I think the photos and food are worth it!

We bundled up to walk on the beach, read and relaxed, studied a little, and cooked some yummy food. 

Above: Crock-pot BBQ Chicken, Sweet Potato Cornbread, Sauteed Green Beans, and Trader Joe's Coastal Merlot. The chicken was so easy! All I did was place a few boneless and skinless chicken breasts in a crock-pot with BBQ sauce, a little brown sugar, apple cider vinegar, and a touch of bourbon and cooked it on high for about 5 hours. Easy and delish!

Above: Bart's Black Bean Soup with Rotisserie Chicken with Guac with an Orange Twist (inspired from this recipe). One word to describe this soup is QUICK... it is ready in minutes. I add the chicken to make it more filling for my hungry husband. The guac was so good! We got on a guac kick and ended up making it 3 nights in a row! It is a nice twist to our normal guac concoction.
